This salad is a personal favorite for when I need a fast meal that provides me with the sustenance I need without being overly filling. This delightfully quick and easy Italian Tuna Salad is perfect on its own or it may be paired with a light soup and crusty bread for entertaining guests. This recipe also makes a great sandwich. You may choose to play around with the flavors and add other ingredients, like sun-dried tomatoes, beans, or capers. You never know what you might discover! 🌿
Serves: 4
Prep time: 10 minutes
Ingredients
3 tablespoons fresh lemon juice (~1 medium lemon)
2 tablespoons extra-virgin olive oil
1 garlic clove, minced
1/2 teaspoon ground black pepper
2 (5-oz) cans tuna, drained
1 (2.25-oz) can sliced olives
1/2 cup chopped fresh fennel or celery (1 stalk)
1/2 red onion, thinly sliced
1/4 cup raw & shelled pumpkin seeds, to top
Optional
Your choice of salad greens (i.e. spinach, arugula, Romain)
Crusty bread
Your favorite soup
Directions
In a medium bowl, whisk to combine the lemon juice, oil, garlic, and pepper. Add the tuna, olives, and fennel (or celery). Using a fork, separate the tuna into chunks and stir to combine all the ingredients.
Divide the tuna mix equally among 4 small salads or 4 slices of bread, whichever you prefer.
